I don't know about you, but I GREW UP eating my momma's famous chili! It was one of my favorites while growing up because it was super comforting, filling and it had all of the right flavors that hit the spot! This chili recipe was inspired by my momma's famous chili, however, VEGANIZED and healthier! It's a total guilt-free, plant-based meal that will satisfy the belly and leave a smile. With ONLY 10 easy ingredients, you'll find it especially convenient and quick to whip up for the family! It's perfect for overcast days, goes well in meal-prep, and a total comfort food, which we all love. So, let's get started.

Smokey + Flavorful + Hearty

ONLY 10 INGREDIENTS

TOTAL TIME: < 30 MINUTES

 3-4 SERVINGS

 

What You'll Need:

  • 1 Can of Organic Chili Beans (Also, check that it's BPA Free & Low Sodium)
  • 1 link of FieldRoast Smoked Apple Sage Sausage (Publix and Walmart sells this!)
  • White or Yellow Onion
  • Yellow or Red Bell Pepper 
  • Roma Tomato
  • 1 Packet of Chili Mix 
  • 2 Tbsp Tomato Paste 
  • 1 Cup of Organic Vegetable Broth 
  • Onion Powder
  • Sea Salt
  • Cayenne Pepper (optional)
  • Corn (optional)
  • Mushrooms (optional)

 

What To Do: 

  • Chop into small squares: onion, bell pepper, tomato and vegan sausage link. 
  • Sauté chopped white onions, bell pepper, tomato in tomato paste and vegetable oil of choice. Set aside.
  • Sauté diced vegan sausage link until slightly crispy. Set aside.
  • Place all ingredients in a medium sized pot. Add vegetable broth, beans and enough water to cover ingredients.
  • Add chili mix along with listed seasonings. Season to liking. 
  • Cook on medium low for 20 minutes. 
  • Ready to Serve!

Enjoy with:

  • Top with a dollop of vegan sour cream.
  • Eat on a bed of rice or quinoa.
  • Enjoy with sliced avocado and pita bread.
