Amaranth Porridge + Mango

They say Amaranth is the NEW quinoa! It's an "ancient grain"  that's been used for thousands of years! It can be used in combination with other ingredients to create a variety of recipes, from soups, breads, dressings and this yummy porridge! It's for sure a lovely nutritional addition to your diet because it packs quite a punch: it's a complete protein, has all the amino acids, and is a great source of fiber, magnesium, and iron. No wonder it's a SUPER FOOD!

This breakfast choice is stellar and simple way to up your nutrition intake - AND IT'S DR. SEBI APPROVED!

Nutritious + Protein Packed + Earthy

ONLY 7 INGREDIENTS

PREP TIME: <5 minutes | COOK TIME: 20 MINS | TOTAL TIME: 25 MINUTES

Ingredients

1 cup of amaranth

2 cups of water

1/4 cup nut milk

Choice of sweetener: date sugar, agave or maple syrup.

1 Freshly diced mango 

< 1/4 cup crushed walnuts

1 tsp  hemp seeds

 

Instructions

Boil the water, then add the amaranth and bring to a boil again. Stir well, reduce the heat to a simmer and cover the pot for 20 minutes. After 20 minutes, your amaranth is ready to go! Make sure to stir well and add nut milk for a looser consistency.  Scoop some into a bowl and add your accompaniments: fruit, nuts, nut milk and hemp seeds; however much of each you feel inclined to add!
