The Best Vegan Mac-No-Cheese

I cannot deny that I am completely enamored by this 100 percent VEGAN mac 'n' cheese recipe! It mimics my grannies soul-food mac recipe! And for that, I feel accomplished that I now carry the baton for this staple family dish! I have made this recipe a few times for non-vegan family members, and let's just say, they couldn't tell the difference! Not to mention, they also devoured it. That is enough evidence and validation to say this dish is the real deal! I hope you enjoy this recipe as much as I do! Let's get started! 

 

Super Cheesy + all Vegan + so Creamy

ONLY 10 Ingredients

PREP TIME: 15 MINS | COOK TIME: 45 MINS | TOTAL TIME: 1 HOUR

6-8 servings

 

Note: I strongly advise using the so delicious brand of shredded vegan cheese. it melts incredibly well. and you can find it at your nearest whole foods market.

 

Ingredients

  • 1 pack of ancient grain elbow pasta ( 8 oz) 

  • 1 pack of shredded So Delicious Dairy Free Cheddar Cheese (8 oz)

  • 1 pack of shredded So Delicious Dairy Free Cheddar Jack or Mozzarella Cheese (8 oz)

  • 1 cup of Almond Milk

  • 1/4 Cup of Vegan Butter

  • 1 - 1 1/2 Tbsp of Nutritional Yeast

  • Lawry's Seasoned Salt (2 tbsp+) - this is not an optional ingredient! 

  • Adobo (2 tbsp+)

  • Pepper (2 tbsp+)

  • Onion Powder (2 tbsp+)

 

Instructions:

  • Boil elbow pasta until tender. Strain and set to the side.

  • Prepare the cheese sauce by adding the following ingredients to a medium sized pot: 1/4 almond milk, 1/4 vegan butter, 1 1/2 tbsp nutritional yeast, 1/2 cup of cheddar cheese, 1/2 of mozzarella or Jack cheese. Cook on medium high for 10 minutes & stir well.

  • Transfer 1/3 of cooked and strained elbow pasta to a medium sized baking pan. Add a layer of (both) dried cheeses (1/2 cup worth), along with 1/3 cup of cheese sauce and seasonings to the 1/3 pasta. Alternate this process until all of the elbow pasta is covered with ingredients. mix well. 

  • feel free to add an additional amount of seasonings (such as black pepper) and cheese to the top of the mac.

  • bake for 45- 50 minutes  on 370 F

enjoy with a side of:

  • fluffy spelt rolls

  • candied yams

  • collard greens 

  • fried okra
