Tabbouli Salad | Vegan

A classic and refreshing lebanese cuisine

I can vividly remember eating Tabbouli Salad as a little girl. My father would bring the family homemade Lebanese food sent from my God-father, who is a native from Lebanon. We knew we were in for a treat once those flavorful Arabian aromas came sweeping through that front door! I hope you enjoy this recipe as much as my family and I have!

 

INGREDIENTS:

  • 1 cup of Bulgar

  • 1/2 cup of finely diced parsley 

  • 1/2 tomato

  • 1/2 small onion

  • 1/2 tsp of lemon juice

  • 1/4 tsp of onion powder

  • 1/4 tsp of garlic powder

  • 1/2 tsp of olive oil

  • 1/2 tsp of dried parsley flakes

  • a pinch of mint

  • salt (optional)

 

INSTRUCTIONS:

  • Add one cup of boiled water and one cup of bulgur in a small bowl and mix. Cover with top while cooking to avoid steam from escaping. Once cooked and tender, set aside to cool. 

  • Finely dice onion, tomato, and fresh parsley. Set aside in a bowl. 

  • Once bulgur is cooled, add the freshly diced onion, tomato, and parsley. 

  • Mix well and add seasonings, dried parsley, lemon juice and olive oil.

  • allow this meal to cool before serving.

  • ENJOY!
