"Cheesy" Mashed Potatoes | Vegan

Need some side-dish inspiration? Try my very own BOMB vegan mashed potatoes! All you'll need is just 9 simple ingredients to access this oh so very creamy, cheesy, buttery and all together savory dish - a complete sensory bliss! My tastebuds are in food heaven with this one! I usually bring this dish to family gatherings just to watch the carnivores unapologetically devour! I am sure you will as well. So, let's get this party started!

  • TOTAL TIME: 45 minutes

  • YIELD: 6-8 servings

 

INGREDIENTS:

  • 6 medium / large yellow Potatoes.

  • 2 cups vegan shredded cheddar cheese.

  • 1 cup vegan shredded mozzerella cheese.

  • 1 cup of vegan sour cream.

  • 1/4 cup of vegan butter.

  • 1 tsp black pepper.

  • 1 tsp salt.

  • 1 tsp adobo.

  • 1/4 tsp garlic powder. 

 

INSTRUCTIONS:

  • rinse potatoes well. pick off any spuds, if necessary. 

  • boil potatoes in a large pot until tender (use a fork to check tenderness).

  • strain water from potatoes. transfer boiled potatoes into a separate (large) dish.

  • began to mash potatoes well, leaving just a few chunks.

  • add both cheeses, butter, sour cream and seasonings.

  • mix well. 

  • ENJOY!
