Cheddar Cheese | Vegan

Feel free to indulge in this creamy and guilt-free vegan cheddar cheese! This cheese spread is nutrient dense and loaded with the good stuff: protein, magnesium, iron and probiotics. Not only is this cheese spread packed with hardy nutrients, but its flavor is so rich and offers the sharp & cultured / aged taste that traditional dairy cheddar cheese would (without all of the processed additives, dyes or guilt). This appetizing cheese spread is quite easy to prepare and can be featured in any engagement!

  • Yield: 1 medium sized bowl. 

 

Ingredients :

  • 2 cups of raw cashews soaked overnight

  • 1/4 cooked brown rice

  • 1/3 tsp olive oil

  • 1/3 tsp nutritional yeast

  • 3 tsp apple cider vinegar

  • 3 tsp chickpea miso

  • 1/4 cup water

  • 1/2 tsp salt

  • dime sized piece of Kombucha SCOBY or 2 Probiotic capsules

 

instructions:

  • blend listed ingredients in a food processor or high speed blender until a smooth consistency is achieved.

  • transfer nut cheese into a bowl and cover with a napkin, cheese cloth, or kitchen towel.

  • secure with rubber band.

  • allow cheese to culture for 48 hours on counter-top. (store in fridge, up to 2.5 weeks).

  • wam-bam thank you ma'am!

 

enjoy it with:

  • A side of crackers.

  • spread on toast.

  • spread on wraps. 

  • Pizza.

  • Mac No Cheese Sauce.
