Sweet Quinoa Salad | Vegan

Who say's the vegan diet doesn't offer enough protein? Come again? Because this powerhouse of a salad is packed with a formidable source of protein, (thanks to the quinoa, wild rice and pistachio's). In addition, the combination of sweet mango and tart cranberries makes it all the more delightful and filling. This Sweet Quinoa Salad is dressed with natures progeny: quinoa, kale'emmmm, corn, fresh mango, wild rice and more! Not only is this salad a superior source of protein, but it offers the body fiber, iodine, amino acids, vitamins C and A.

  • Yield: 4 -5 servings.

 

ingredients:

  • 1 1/2 cups of Quinoa

  • 1/3 cup of Corn

  • 1/4 cup of Wild rice

  • handful of Kale

  • 1/4 cup of Crushed pistachios

  • 1/3 cup of Freshly diced mango and or apple

  • 1/4 cup of Cranberries

 

instructions:

  • cook quinoa (according to box instructions).

  • cook wild rice (according to box instructions).

  • cook corn.

  • finely chop kale.

  • finely dice ripe mango and or apple. 

  • finely crush pistachios. 

  • transfer all ingredients to a bowl and mix well.

  • cool in refrigerator. 

  • enjoy!
