Mediterranean Orzo | Vegan

a flavorful vegan pasta salad

There's no better way to enter March than with this refreshing pasta salad! It's savory and light, which makes for a great Spring dish.

  • Yield: 5 servings. 

 

ingredients:

  • Orzo pasta

  • 1 tbsp Olive oil

  • 1 tbsp Capers (or more depending on your desire)

  • 1 medium diced tomato

  • 1/4 cup Sliced black olives  

  • salt for taste

  • 1 tsp Vinegar (white)

  • sprinkle of Dill

  • 1/2 cup crumbled Vegan feta cheese

 

instructions:

  • boil orzo pasta until soft.

  • transfer into bowl with the listed ingredients.

  • add salt and other seasonings for desired taste.

  • mix well.

  • cool in fridge.

  • enjoy!

 

IT CAN BE SERVED with:

  • vegan greek salad.
