Mediterranean Lentil Soup | Vegan

The Mediterranean diet has been coined as one of the most nutritious diets in the world. It offers an abundance of legumes, whole grains, fruits, vegetables and olive oil, which contain a combination of monounsaturated fatty acids, proteins, HDL (good cholesterol) and more. This golden lentil soup offers the best of both worlds: a refreshing and choice Mediterranean flavor for the palate and a superior source of protein!
Prep Time: 5 - 10 minutes
Cook Time: 3 hours (if using slow cooker)
Yield: 4-5 bowls
2 cups of Red Lentils
1 1/2 cup of Vegetable Stock
1 1/2 - 2 pints of water
2 tsps of ground Turmeric
2 tsps of ground Cumin Seed
1/4 of Cayenne pepper
1/2 of large White onion
1 tsp of olive oil
finely chopped Cilantro
1/2 of Freshly squeezed lemon (add at the end)
finely diced clove of garlic (optional)
thoroughly rinse lentils with cold water - then strain.
transfer lentils to slow cooker and add water.
add listed ingredients to slow cooker.
add salt, onion powder and garlic powder seasonings for taste.
slow cook until lentils are soft. (approx. 3 hours)
add lemon juice.
sprinkle dill or cilantro leaf atop for decoration.
