Everyone loves pancakes! I sure do, and i’ve got just the recipe to enjoy them guilt-free! Thanks to an ancient grain called, Spelt!

Here’s the scoop on spelt:

1 cup offers 59% of the daily value of Magnesium, 42% of iron, and 20% of vitamin B-6.

PLANT-BASED INGREDIENTS

PREP TIME: <5 minutes

COOK TIME: < 5 minutes

What You’ll Need…

  • 1 cup of whole grain organic spelt flour

  • 2 tablespoons organic coconut sugar or date sugar

  • 2 teaspoons aluminum free baking powder (this will make them nice and fluffy)

  • A pinch of sea salt

  • A dash of cinnamon

  • 1 cup unsweetened almond milk, or non-dairy milk of choice

  • 1 teaspoon vanilla extract

  • 2 tablespoons coconut oil, for cooking

What To Do…

  • Make batter: Combine flour, salt, sugar and baking powder into a medium bowl or wide-mouthed pitcher. Add milk and vanilla, mix until well combined.

  • Cook: If using a skillet, heat oil on medium heat. Place batter on griddle/skillet (I like to scoop the batter using a 1/4 cup measuring cup for uniform pancakes), cook until bubbles form around the edges or top and flip, about 3 minutes per side.

  • Serve with maple syrup or fresh fruit.

  • Makes about 6 pancakes, serves 3.

Notes:

  • For thinner pancakes add more milk.

  • Try to use aluminum free baking powder - it’s much healthier.
