Sweet Squash & Swiss Chard Salad

Sweet + Nutritious + Spiced

This salad has a nostalgic mixture of Autumn flavors; with an arrangement of butternut squash, pumpkin spice, cranberries, finely grounded nuts, and of course, greens that are rich in chlorophyll. You don’t always need a sweet potato pie to remind you of the freshness of Fall - a simple & colorful salad can do just that! I hope you enjoy.


Sweet + Nutritious + Spiced

5 SIMPLE INGREDIENTS

PREP TIME: < 10 MINUTES

What You’ll Need…

  • 1-2 handfuls of rainbow swiss chard.

  • 5-10 chopped squares of cooked butternut / calabaza squash.

  • 2 tbsp of your choice nuts ( I used ground / crushed Brazil nuts + hemp seeds).

  • Pear vinaigrette (I purchased this dressing from Whole Foods, but you can always use your choice sweetened vinaigrette instead!)

  • 1/4 cup of dried cranberries

  • A dash of finely ground cinnamon or pumpkin spice (optional).


What To Do…

  • Thoroughly rinse the rainbow swiss chard, dry & place in a salad bowl.

  • Add the cooked & chopped squares of calabaza squash, along with the ground nuts, and cranberries to the salad bowl.

  • Top the salad with the pear vinaigrette dressing & optional spices.
