All Vegan Lentil "Meat" Loaf

Here’s to a Healthy Holiday! You’ll fit right in with the meat-eaters with this one! First off, it looks like actual meat loaf, two, it’s equally enjoyable, and three, it’s super nutritious! Lentils are an amazing source of folate; just 1 cup offers 90% of the recommended daily value! Also, folate helps with red blood cell production. Imagine what the other veggies in this recipe contribute! I hope you enjoy this recipe as much as I do. Let’s get started!

plant-based INGREDIENTS

PREP TIME: < 15 MINUTEs

Cook time: 1 hour

6-8 SERVINGs  

What You’ll Need…

  • 2 cups of cooked lentils - I used brown lentils.

  • 1 stalk of celery chopped & sautéed

  • 1 medium yellow onion chopped & sautéed

  • 1 large carrot chopped & sautéed

  • 1/4 cup of walnuts chopped & sautéed

  • 1/2 cup of mushrooms chopped & sautéed

  • 2-3 leaves of fresh basil

  • 1 tbsp vegan Worcestershire sauce

  • 1 tbsp Coconut liquid amino’s

  • 1 tsp liquid smoke (optional)

  • Adobo (of course!)

  • Sea salt

  • 1 tbsp bbq sauce

  • 1/2 cup of break crumbs

What To Do…

  • Boil lentils in water or vegetable broth until soft.

  • Chop & sauté carrot, mushrooms, walnuts, and celery in a pan until soft - 10 minutes.

  • Once lentils are done, drain and transfer to a food processor, along with the all of the ingredients listed above, including the sautéed veggies!

  • Blend for a few seconds - < 10 seconds.

  • Line loaf pan with parchment paper (cut excess off if need be) and transfer lentil mix into it.

  • When the lentil mix has been transferred, pat down well using a spoon to make sure there are no air bubbles.

  • Place in the oven for 1 hour on 350 degrees. The top should be somewhat firm and browned.

  • Allow the lentil loaf to cool for 20-30 min before serving.

Notes:

  • The consistency of the lentil loaf should be soft yet firm. Allowing it to cool before serving will give it time to solidify.

  • If your lentil “meat” loaf isn’t firm enough to your own liking, bake a little longer, roughly 25 min.

  • You can top with bbq, cranberry sauce, or a strawberry preserve! It gives it a nice sweet flavor.
